Absolutely Lobster® will change the way you think about enjoying lobster tails.  Minimally processed for maximum flavor, our packaging ensures that Absolutely Lobster® tails cook in under 3 minutes,  drenched in a lightly seasoned, buttery sauce you can add to pasta, risotto or save for dipping.

Absolutely Lobster® tails come from family-owned fisheries with sustainable values to ensure long term lobster populations.   Within 36 hours of being freshly caught, Absolutely Lobster® tails are split, cleaned and frozen -- and never pounded.

Alison's Story


Absolutely Lobster® founder Alison Barshak knows seafood.  Opening the famed Striped Bass in Philadelphia -- an entire restaurant dedicated to seafood -- she found herself heralded across the country for her cooking, while Esquire Magazine dubbed Striped Bass our nation’s “Best New Restaurant of The Year" in 1994.  Moving on to open her own restaurants, as all great chefs do, she continued to produce revolutionary dishes uniquely styled to her outstanding palate at Alison at Blue Bell and Alison Two. 

 

In 2008 she was nominated for the prestigious James Beard award, the veritable Oscars of the food industry, as “Best Chef, Mid- Atlantic”, alongside top chefs Jose Garces and other notables. 

 

After 9 years of restaurant ownership, Alison decided to focus her considerable talents on product innovation, joining a large Atlanta-based seafood company as a lead Research & Development Chef. Creating delicious, value-added seafood dishes for nationwide clients like The Fresh Market, Costco, and Harris Teeter, Alison became an expert in designing prepared seafood products and meals for at-home enjoyment.  From sourcing to processing, from testing to marketing, Alison just knows what tastes great -- and how to make her recipes come to life with simple at-home preparation. 

 

Alison’s newest creation, Absolutely Lobster®, is her most delectable yet! After leaving the restaurant industry, Alison wanted to create an easy, home-cook-friendly lobster tail for the marketplace.  Cooking a seafood dinner at home was often just too much work or too disappointing:  live lobster, hammers, shells and a big mess, or a thawed tail that lost all of its juices and some of its size, just like in the restaurant.

 

Thus, Alison began her quest to create a lobster tail that could be cooked from frozen, and she started experimenting.  The finished result?  A succulent lobster tail with all the flavor of fresh seafood -- complete with sauce -- from freezer to fork in under 3 minutes.  Alison and Absolutely Lobster® hope your kitchen becomes your new “absolute” favorite seafood restaurant!
